Recipe: Moong Dal Chaat




Snack time usually becomes the junk eating time. I personally crave for some chaat, samosa, fried food  along with my evening tea. Having said that it's definitely not a good idea to eat all these due to the obvious health reasons. I recently experimented with moong daal to prepare a chaat version of it which turned out to be really good and tasty. The green or sprouted moong daal provides the required protein nutrient and at the same time, it's delicious too. Give it a try to this moong daal chaat and let me know how was it.

Moong Dal Chaat/ Green Moong Dal Chaat/ Sprouted Moong Dal Chaat:

 


Cooking Time: 15 minutes

Ingredients:

1 Cup Soaked Moong Daal (Overnight)/Sprouted Moong Dal
4 Tablespoon Curd
3 Tablespoon Imli sauce or imli Chutney (prepared at home)
1 Tablespoon Red chilli Powder
1 Tablespoon Chaat Masala
1 Tablespoon Oil
2 Tablespoon Moong dal Namkeen (Available in the market - Optional)
1 Medium sized chopped Onion
Coriander for garnishing
Salt as per taste

Method: 

Soak moon dal overnight or use the sprouted moong dal.
In a pan add oil and add moong dal, salt, red chilli powder. Stir well and cook it for 8-10 minutes.
Transfer it to the plate.
Add curd, imli chutney, chopped onions, moong dal namkeen (it gives a crunchy flavour),chaat masala.
Garnish with coriander and any nameen of your choice.
Serve and Enjoy

Recipe: Steamed Chicken momos/ Chicken dumplings or wontons



Who doesn't love Momos or Dumplings or Wontons? I love having momos and it is one of my favorite street food. You can see so many street food vendors in Delhi or Mumbai selling the steaming hot momos with fiery garlic tomato chutney or schezwan sauce. I am sharing the recipe of piping hot chicken momos or chicken dumplings. Follow this chicken momos recipe step by step.

Chicken Momos:


Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Serves: 12-15 Momos


Ingredients:


For Filling/Stuffing:

200 Gram minced Chicken
1 Medium Size Onion
1 Tablespoon Garlic Paste
1 Tablespoon Soy Sauce
1 Tablespoon Coriander leaves
3 Tablespoon Oil/Butter
Salt to taste

For Dough:

1 Cup Whole Wheat Flour
1 Cup All Purpose Flour/ Maida
1 Tablespoon Salt
Water


Method:


For stuffing/filling:

Add all the ingredients to the minced chicken and mix well.
Allow it to set for 15-20 minutes.

For Dough:

Add whole wheat flour, all - purpose flour and salt together.
With the help of water knead it  into a not too soft not hard dough.

For Momos:

Take small portions of the dough, roll it in dry flour and make it thin puri sized.
Place stuffing in the center and fold one end over other or simply make it "potli" shape and seal it together.
Heat water in a deep pan and place the steamer over it( you can also use idli cooker)
Place the stuffed momos on the top and cover it with a lid.
Since it is chicken momos so steam it for 20 minutes so that the chicken is cooked completely.
Serve the momos hot with spicy garlic tomato chutney.

Recipe: Beetroot Raita




Raitas and Papads complement your meal in a nice way. Raitas go very well with Biryanis and Pulav or even with the full Indian meal. Recently, I tried beetroot raita because I was totally in love with the colour of this raita by seeing the pictures of it. It is nutritious, tasty and simple to make. Try it yourself and you will too fall in love with it's colour and taste for sure.

Coconut Chuntey with Tomatoes 


Beetroot raita:


Total Time: 10 Minutes

Ingredients:


1 Beetroot (grated)
1 Cup Yogurt/Curd
1 Green Chilli
1/2 Tablespoon Cumin powder
Blacksalt to taste
Salt to taste

Method:


Grate the beetroot and keep it in a bowl
Whisk the curd nicely into it.
Add salt, cumin powder and green chilli and whisk everything nicely.
Serve with your meal

Recipe: Chinese-Style Vermicelli - A twist to regular Vermicelli Upma





Desi- Chinese the Indianized version of Chinese cuisines is popular throughout India. This great fusion is accepted and relished by everyone. I am also fond of Chinese cuisines and prepare them quite often in my kitchen. "Namkeen Sewaiyan" or "Vermicelli Upma or Pulav" is a popular evening snack or breakfast. I thought why  stick to only noodles so  I gave the vermicelli recipe a twist from the regular onion-tomato version and created the Chinese version of vermicelli. Check out the recipe:

Chinese-Style Vermicelli:


Preparation time: 10 minutes
Cooking Time: 10 Minutes
Serves : 2


Ingredients:


3 Cup Vermicelli (I used the Bambino brand)
1/2 cup finely chopped Cabbage
1/2 cup finely chopped Carrot
1/4 cup finely chopped Capsicum
1 Green chilli
1 small size Onion (optional)
2 Tablespoon Soy sauce
1 Tablespoon Vinegar
3 Tablespoon Ching's Noodles Masala
2 Tablespoon oil
Salt to taste


Method: 

Boil vermicelli, when cooked drain the excess water using a sieve and keep aside.
In a pan add oil, green chilli and all the vegetables. Saute it for 5 minutes.
Add the boiled vermicelli, ching's noodles masala, salt and all the sauces.
Mix everything well and cook it for 3-4 minutes on high flame (keep mixing)
Serve immediately

Recipe: Chicken Seekh Kebab on Tawa/Pan





I am a big fan of Chicken kebabs, be it Chicken tikkas, Seekh kebabs or Galouti kebabs. I have made various versions of chicken tikkas at home but never tried seekh kebabs as they require grill/tandoor to make. When I came across the recipe of seekh kebab on tawa without an oven, which was very easy to make and the kebabs made very succulent and tasty, I immediately decided to give it a try. You can also try this recipe which requires and let me know how it turned out to be. It takes lesser time to make as no marinate is required, you just have to combine the chicken with ginger-garlic paste, onions and spices. 



Chicken Seekh Kebab:


Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 9-10 kebabs


Ingredients:


250 Grams minced Chicken
1 Medium sized Onion
1 Tablespoon ginger-garlic paste
2 Tablespoon  Garam Masala
1 Tablespoon Chilli powder
1 Tablespoon Lemon juice
4 Tablespoon Refined Oil / Butter
1 Green chilli chopped
Salt to taste


Method:

 Mince the chicken.

Add chopped onions, green chilli, garam masala, salt, red chilli powder, coriander leaves, ginger-garlic paste, oil to the minced chicken.

Mix all ingredients well  and allow it to rest for 15-20 minutes.

Now, take skewers, wet your hands with little oil.

Take a small portion of the minced chicken and coat it along the skewer and shape it in cylindrical or log shape.

Make sure the mixture is evenly spread.

Now, put some oil on the pan or tawa and place the kebab over it.

Keep rotating it so that all the sides are cooked nicely.

Cook it till it becomes golden brown on all sides.

Serve hot with green chutney.

Recipe: No Bake Homemade Oats/Granola Protein Bar without Honey





With people becoming more health conscious these days their focus has also shifted to Protein rich diet which is highly recommended for all the weight watchers who struggle to shed off some extra pounds. To capitalize this opportunity the market is flooded with protein bars these days. They are becoming popular because it's very convenient to have them in your snack or breakfast and you don't need to compromise on your protein nutrition. But, that's also true that  these protein bars are priced very high. So, I thought why not make these bars at home and eat healthy everyday. There are two versions of these bars with protein supplement powder (easily available in market ) and without protein powder. Try out this recipe and let me know how it turned out to be. I have made it without honey as people say honey looses its nutritional properties on heating. This is the 'No Bake' version of the Granola Bars.


Homemade Oats/Granola Protein Bar without Honey: 

Total Time: 60 Minutes
Cooking Time: 20 Minutes
Serves : 10 Bars

 
Ingredients:

1    Cup Cornflakes
1    Cup Instant Oats
1/2 Cup Chocos
1/2 Cup Sliced Almonds
1/2 Cup Raisins 
1    Cup  Jaggery
1/4 Tablespoon Vanilla Essence
8    Tablespoon Protein Powder  


Method:

1.) Dry Roast Oats, Cornflakes, Sliced Almonds and Raisins till the raw smell goes away then keep it aside.
2.) In a deep pan add the jaggery and allow it to melt, keep stirring till it melts completely and thickens.
3.)Add vanilla essence and turn off the flame then add the roasted mixture with the protein powder.
4.) Mix immediately and ensure the mixture is coated well with jaggery.
5.) Grease a plate and spread over this mixture to cool down.
6.) Refrigerate it for half and hour.
7.) Cut in the rectangle or square shape. 
8.) Store in airtight container and enjoy as snack or breakfast with a glass of milk.
