Whole Wheat Oats Banana Cake Recipe - With Egg




You must have visited my recipe of Eggless Wholewheat Oats Banana Cake. This recipe is with Egg as egg adds fluffiness and sponginess to the cake. I made the cake in the Pressure Cooker but you can make it in Oven too.

 

Wholewheat Banana Oats Cake

Ingredients:

1 1/2 Ripe and mashed Bananas
1 Cup Wholewheat Flour
1 Cup Instant Oats
1 Egg
1/2 Cup Refined Oil
3/4 Cup Sugar
1 1/2 Tablespoon Baking Powder
1/2 Tablespoon Baking Soda
1/2 Tablespoon Vanilla Essence

Method:

Mash the ripe Bananas nicely so that no lumps are left.
Add oil, sugar, vanilla essence and egg
to the mashed bananas and mix well till the sugar dissolves.
Add all the dry ingredients- wheat flour, oats, baking powder, baking soda and mix well.
Ensure no lumps are left in the cake batter
Pour the batter into the tin which is greased with oil
Remove the whistle of the pressure cooker and place the prepared cake tin and cook on medium flame for 40 Minutes.
Check with a knife if it comes out clean the cake is done else cook for another few minutes.
You can also bake it at 180 degrees for 35-40 Minutes.

Recipe: Schezwan Chicken Wrap




Wraps and rolls are my personal favourite. It is something which is convenient to have and a complete meal in itself and one can have on the go. The another thing which I like most about wraps is that there is no fixed rules or recipe to make a wrap. It is totally upon your liking, taste, and availability of the ingredients. Prepare a fulfilling stuffing and wrap it up ! I keep experimenting with the stuffing part and want to share one such successful attempt. I have shared the recipe of another version of chicken wrap earlier on the blog. I had some schezwan sauce available with me, so thought of using it this time in my wrap and since I added beetroot, it turned out to be really colourful and delicious. Do give it a try

Schezwan Chicken Wrap:


Preparation Time: 15 Minutes
Cooking Time: 20 Minutes


Ingredients:

100 grams cooked Chicken
1/2 Cup Shredded Cabbage
1/2 Cup Shredded Carrot
1/2 Cup Shredded Beetroot
1 Medium sized Onion
2 Tablespoon Schezwan Sauce
Mayonaisse as per taste
Salt to taste

Method:

Heat  oil in a pan and cook the chicken pieces, add salt while cooking, once cooked remove and keep aside.
Again add 2 tablespoon oil in the pan and add all the vegetables i.e cabbage, onion, carrot, beetroot and cook on high flame for 5 minutes.
Add cooked chicken pieces.
Add schezwan sauce and tomato sauce. Keep stirring and ensure sauces are mixed well and the vegetables and chicken pieces are well coated.
 Make rotis or chapatis from whole-wheat flour and spread the stuffing on the rotis or chapatis.
Add mayonnaise as per your liking.
Roll it and you can have it like this also or I prefer to grill it.
The grilling of the wrap can be done on Tawa or Sandwich maker.
Grill it for 4-5 minutes and serve immediately.

Recipe: Moong Dal Chaat




Snack time usually becomes the junk eating time. I personally crave for some chaat, samosa, fried food  along with my evening tea. Having said that it's definitely not a good idea to eat all these due to the obvious health reasons. I recently experimented with moong daal to prepare a chaat version of it which turned out to be really good and tasty. The green or sprouted moong daal provides the required protein nutrient and at the same time, it's delicious too. Give it a try to this moong daal chaat and let me know how was it.

Moong Dal Chaat/ Green Moong Dal Chaat/ Sprouted Moong Dal Chaat:

 


Cooking Time: 15 minutes

Ingredients:

1 Cup Soaked Moong Daal (Overnight)/Sprouted Moong Dal
4 Tablespoon Curd
3 Tablespoon Imli sauce or imli Chutney (prepared at home)
1 Tablespoon Red chilli Powder
1 Tablespoon Chaat Masala
1 Tablespoon Oil
2 Tablespoon Moong dal Namkeen (Available in the market - Optional)
1 Medium sized chopped Onion
Coriander for garnishing
Salt as per taste

Method: 

Soak moon dal overnight or use the sprouted moong dal.
In a pan add oil and add moong dal, salt, red chilli powder. Stir well and cook it for 8-10 minutes.
Transfer it to the plate.
Add curd, imli chutney, chopped onions, moong dal namkeen (it gives a crunchy flavour),chaat masala.
Garnish with coriander and any nameen of your choice.
Serve and Enjoy

Recipe: Chicken Seekh Kebab on Tawa/Pan





I am a big fan of Chicken kebabs, be it Chicken tikkas, Seekh kebabs or Galouti kebabs. I have made various versions of chicken tikkas at home but never tried seekh kebabs as they require grill/tandoor to make. When I came across the recipe of seekh kebab on tawa without an oven, which was very easy to make and the kebabs made very succulent and tasty, I immediately decided to give it a try. You can also try this recipe which requires and let me know how it turned out to be. It takes lesser time to make as no marinate is required, you just have to combine the chicken with ginger-garlic paste, onions and spices. 



Chicken Seekh Kebab:


Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 9-10 kebabs


Ingredients:


250 Grams minced Chicken
1 Medium sized Onion
1 Tablespoon ginger-garlic paste
2 Tablespoon  Garam Masala
1 Tablespoon Chilli powder
1 Tablespoon Lemon juice
4 Tablespoon Refined Oil / Butter
1 Green chilli chopped
Salt to taste


Method:

 Mince the chicken.

Add chopped onions, green chilli, garam masala, salt, red chilli powder, coriander leaves, ginger-garlic paste, oil to the minced chicken.

Mix all ingredients well  and allow it to rest for 15-20 minutes.

Now, take skewers, wet your hands with little oil.

Take a small portion of the minced chicken and coat it along the skewer and shape it in cylindrical or log shape.

Make sure the mixture is evenly spread.

Now, put some oil on the pan or tawa and place the kebab over it.

Keep rotating it so that all the sides are cooked nicely.

Cook it till it becomes golden brown on all sides.

Serve hot with green chutney.

Recipe: No Bake Homemade Oats/Granola Protein Bar without Honey





With people becoming more health conscious these days their focus has also shifted to Protein rich diet which is highly recommended for all the weight watchers who struggle to shed off some extra pounds. To capitalize this opportunity the market is flooded with protein bars these days. They are becoming popular because it's very convenient to have them in your snack or breakfast and you don't need to compromise on your protein nutrition. But, that's also true that  these protein bars are priced very high. So, I thought why not make these bars at home and eat healthy everyday. There are two versions of these bars with protein supplement powder (easily available in market ) and without protein powder. Try out this recipe and let me know how it turned out to be. I have made it without honey as people say honey looses its nutritional properties on heating. This is the 'No Bake' version of the Granola Bars.


Homemade Oats/Granola Protein Bar without Honey: 

Total Time: 60 Minutes
Cooking Time: 20 Minutes
Serves : 10 Bars

 
Ingredients:

1    Cup Cornflakes
1    Cup Instant Oats
1/2 Cup Chocos
1/2 Cup Sliced Almonds
1/2 Cup Raisins 
1    Cup  Jaggery
1/4 Tablespoon Vanilla Essence
8    Tablespoon Protein Powder  


Method:

1.) Dry Roast Oats, Cornflakes, Sliced Almonds and Raisins till the raw smell goes away then keep it aside.
2.) In a deep pan add the jaggery and allow it to melt, keep stirring till it melts completely and thickens.
3.)Add vanilla essence and turn off the flame then add the roasted mixture with the protein powder.
4.) Mix immediately and ensure the mixture is coated well with jaggery.
5.) Grease a plate and spread over this mixture to cool down.
6.) Refrigerate it for half and hour.
7.) Cut in the rectangle or square shape. 
8.) Store in airtight container and enjoy as snack or breakfast with a glass of milk.

Recipe: Oats Yogurt Parfait with Fruits



The word "parfait" is a French word meaning 'frozen dessert'. Parfait has become one of the most popular breakfast or dessert option which is made with yogurt. Let me tell you, there are no fixed rules to make a parfait. I was looking for parfait recipe on net and found so many variations in the recipe as a result ended up getting confused which one to try. So, I am sharing my recipe of oats yogurt parfait with fruits. It is light and fulfilling which is just perfect for the summers or the weight watchers can enjoy them as dessert to curb the sweet cravings.



Oats Yogurt Prafait with Fruits

Serves 1
Takes 10 minutes


Ingredients:


4 tablespoon Greek Yogurt (or thick curd)
2 tablespoon Saffola Instant Oats
1/2 tablespoon vanilla essence
1 tablespoon Honey (or as per taste)
1/4 cup water
1 1/2 tablespoon wheat flakes
Fresh fruits (grapes, strawberries or any as per choice)


Method:

Add oats and water in a pan and cook it.
Add vanilla essence and honey.
Cook till oats are done, allow it to cool.
Place the cooked oats in a glass, add yogurt.
Top it up with wheat flakes which will give it a crunch.
Repeat the layering step till you fill the glass or as per your portion size.
Add fruits like grapes, strawberries (or any fruit of your liking)
Serve immediately and Enjoy.










As I told earlier you can make any number of changes in the recipe depending on the availability of the ingredients like oats can be replaced by granola or the strawberries can be replaced by mango.

Recipe - Chicken Hung Curd Salad







Salads preparation are something which has "no fix rules" defined. Innovation and experimenting  with the ingredients can create differently, yet amazing salads recipes. Salad being an important part of the meal has gathered attentions these days as people becoming more health conscious ( including me, of course,:P). Routine food and salad can be boring, so you can always make changes and create delicious salads which you and your family can relish. The 'hung curd' is one of the best things I came across recently and I am totally in love with it. Hung curd is a great substitute for Mayo or any other creamy dressing. This hung curd chicken salad is a complete meal in itself. Loaded with protein, good fibers, and very less fat. There are no fixed ingredients for this salad, check your refrigerator and toss as many veggies as you want. The creamy texture of salad what we have in restaurants use Mayo which is definitely not healthy especially for weight watchers. So, this hung curd comes to rescue which allows you to have the desired creamy texture, the veggies give a crunch to it at the same time its healthy. Have a look at the recipe:

Hung Curd Chicken Salad:

Serves 2

Preparation Time-

For Hung Curd - 2 hours
For Salad : 10 Minutes




Ingredients:

4 Tablespoon Hung Curd
1 Cup chopped grilled chicken/cooked chicken
1/2  Cup shredded Cabbage
1/2 Cup chopped carrot
1/2 Cup chopped  cucumber
1/2 cup sweet corn
1/2 tsp Lemon Juice
11/2 Tablespoon sugar
1/2 Tablespoon Red Chili Powder
Salt as per taste

Method:

Hung Curd:

Take curd and put the curd on a sieve for two hours to remove excess water and make it thick and creamy.
Keep it in the refrigerator for better results.




Salad:

In a bowl take all the vegetables and chicken  and mix sugar.
In another bowl make the salad dressing by mixing the hung curd, salt and lemon juice well to remove any lumps from the dressing.
Mix the salad dressing to the vegetables and chicken.
Toss everything well.
And the salad is ready.
