Mango Yogurt Parfait Recipe










In this scorching  summer of Mumbai, I am always in search of some light meal options.  I am also a firm believer that the breakfast being the most important meal of the day shouldn't be compromised at all. I am a breakfast person and love to explore different options for my breakfast. Recently, I have discovered my new love for parfaits. Parfaits are frozen dessert which is made using curd (dahi). Usually, there are various ways to make a Parfait and many versions are available, but I love to prepare the healthier version of parfait for my family. I love yogurt and prefer to use it in my dishes to avoid using cream. I am very fond of hung curd and try to substitute it with the not so healthy mayonnaise and cream for your recipes.

Since its summer time and I find the market flooded with the yellow beauties, so how can I control myself from bringing them home. So, I bought those mangoes and thought of preparing some simple and yummy dish using it  and at the same time I got an opportunity to try the Prabhat Curd also. Mango Yogurt Parfait:


Total Time: 8 minutes

Serves: 2


Ingredients:


1/2 Cup Instant Oats

1/2 Cup Prabhat Yogurt

1 Mango Peeled and sliced

1 Tablespoon Vanilla Essence

Sugar - as per taste


Method:


Boil water in a pan and add oats, cook till it is done

Add sugar and vanilla essence

Allow it to cool, then add Prabhat Yogurt.

Transfer the mixture to a glass or bowl, top it with fresh mangoes.

Garnish it with chopped nuts (Optional)


Serve immediately

Whole Wheat Oats Banana Cake Recipe - With Egg




You must have visited my recipe of Eggless Wholewheat Oats Banana Cake. This recipe is with Egg as egg adds fluffiness and sponginess to the cake. I made the cake in the Pressure Cooker but you can make it in Oven too.

 

Wholewheat Banana Oats Cake

Ingredients:

1 1/2 Ripe and mashed Bananas
1 Cup Wholewheat Flour
1 Cup Instant Oats
1 Egg
1/2 Cup Refined Oil
3/4 Cup Sugar
1 1/2 Tablespoon Baking Powder
1/2 Tablespoon Baking Soda
1/2 Tablespoon Vanilla Essence

Method:

Mash the ripe Bananas nicely so that no lumps are left.
Add oil, sugar, vanilla essence and egg
to the mashed bananas and mix well till the sugar dissolves.
Add all the dry ingredients- wheat flour, oats, baking powder, baking soda and mix well.
Ensure no lumps are left in the cake batter
Pour the batter into the tin which is greased with oil
Remove the whistle of the pressure cooker and place the prepared cake tin and cook on medium flame for 40 Minutes.
Check with a knife if it comes out clean the cake is done else cook for another few minutes.
You can also bake it at 180 degrees for 35-40 Minutes.

Eggless Wholewheat Banana Oats Cake Recipe - Without Oven




Who doesn't love cakes ? The mention of the word "cake" makes me drool. Out of so many variations of cake available, I am a lover of Banana Cake. The flavour of this moist cake is simply awesome. The recipe is inspired by the very popular Banana Bread but I tried to make a healthier version of this cake. The cake is made with whole wheat flour and oats.. Yes, you heard right Oats ! Trust me, the taste of this cake is no less than awesome. This Wholewheat Oats Banana Cake makes perfectly moist and fluffy cake. Both Eggless and with egg recipe are available on the blog. Do give this a try it's very simple to make. I made this cake in a pressure cooker but you can make it in the oven also.

Ingredients:

Recipe: Schezwan Chicken Wrap




Wraps and rolls are my personal favourite. It is something which is convenient to have and a complete meal in itself and one can have on the go. The another thing which I like most about wraps is that there is no fixed rules or recipe to make a wrap. It is totally upon your liking, taste, and availability of the ingredients. Prepare a fulfilling stuffing and wrap it up ! I keep experimenting with the stuffing part and want to share one such successful attempt. I have shared the recipe of another version of chicken wrap earlier on the blog. I had some schezwan sauce available with me, so thought of using it this time in my wrap and since I added beetroot, it turned out to be really colourful and delicious. Do give it a try

Schezwan Chicken Wrap:


Preparation Time: 15 Minutes
Cooking Time: 20 Minutes


Ingredients:

100 grams cooked Chicken
1/2 Cup Shredded Cabbage
1/2 Cup Shredded Carrot
1/2 Cup Shredded Beetroot
1 Medium sized Onion
2 Tablespoon Schezwan Sauce
Mayonaisse as per taste
Salt to taste

Method:

Heat  oil in a pan and cook the chicken pieces, add salt while cooking, once cooked remove and keep aside.
Again add 2 tablespoon oil in the pan and add all the vegetables i.e cabbage, onion, carrot, beetroot and cook on high flame for 5 minutes.
Add cooked chicken pieces.
Add schezwan sauce and tomato sauce. Keep stirring and ensure sauces are mixed well and the vegetables and chicken pieces are well coated.
 Make rotis or chapatis from whole-wheat flour and spread the stuffing on the rotis or chapatis.
Add mayonnaise as per your liking.
Roll it and you can have it like this also or I prefer to grill it.
The grilling of the wrap can be done on Tawa or Sandwich maker.
Grill it for 4-5 minutes and serve immediately.

Mango Mastani





I was feeling guilty because I have not posted any Mango recipe on my blog in this Mango season. My social media pages are flooded with Mango pictures, recipes and lots of posts. There is no limit to your imagination when cooking. I saw so many drooling recipes made using mangoes and are on my list now, will give them a try soon. Smoothies and shakes are the best options for the breakfast, lunch or post dinner. I have shared the Banana Strawberry Smoothie recipe earlier on the blog. But, its Mango season so it has to be something related to the Mangoes. Mango milkshake one of the very popular and basic milkshake made in almost every Indian household. I recently tried "Mango Mastani" which was the same mango shake with some vanilla ice cream added to it. The name attracted me to try it out. It is very simple to make and is much creamier than the regular mango milkshake. Try it out

Mango Mastani:

Preparation Time: 5 Minutes
Cooking Time: 5 Minutes
Serves: 2

Ingredients:

2 Ripe Mangoes - Peeled and cut
4 Tablespoon Sugar
5-6 Scoop Vanilla Ice Cream
1 Glass Milk

Method:

Mix all ingredients in a mixer and mix everything well together.
Pour the shake in glasses
Add some Vanilla Ice-cream on the top
Serve immediately

Recipe: Moong Dal Chaat




Snack time usually becomes the junk eating time. I personally crave for some chaat, samosa, fried food  along with my evening tea. Having said that it's definitely not a good idea to eat all these due to the obvious health reasons. I recently experimented with moong daal to prepare a chaat version of it which turned out to be really good and tasty. The green or sprouted moong daal provides the required protein nutrient and at the same time, it's delicious too. Give it a try to this moong daal chaat and let me know how was it.

Moong Dal Chaat/ Green Moong Dal Chaat/ Sprouted Moong Dal Chaat:

 


Cooking Time: 15 minutes

Ingredients:

1 Cup Soaked Moong Daal (Overnight)/Sprouted Moong Dal
4 Tablespoon Curd
3 Tablespoon Imli sauce or imli Chutney (prepared at home)
1 Tablespoon Red chilli Powder
1 Tablespoon Chaat Masala
1 Tablespoon Oil
2 Tablespoon Moong dal Namkeen (Available in the market - Optional)
1 Medium sized chopped Onion
Coriander for garnishing
Salt as per taste

Method: 

Soak moon dal overnight or use the sprouted moong dal.
In a pan add oil and add moong dal, salt, red chilli powder. Stir well and cook it for 8-10 minutes.
Transfer it to the plate.
Add curd, imli chutney, chopped onions, moong dal namkeen (it gives a crunchy flavour),chaat masala.
Garnish with coriander and any nameen of your choice.
Serve and Enjoy

Recipe: Steamed Chicken momos/ Chicken dumplings or wontons



Who doesn't love Momos or Dumplings or Wontons? I love having momos and it is one of my favorite street food. You can see so many street food vendors in Delhi or Mumbai selling the steaming hot momos with fiery garlic tomato chutney or schezwan sauce. I am sharing the recipe of piping hot chicken momos or chicken dumplings. Follow this chicken momos recipe step by step.

Chicken Momos:


Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Serves: 12-15 Momos


Ingredients:


For Filling/Stuffing:

200 Gram minced Chicken
1 Medium Size Onion
1 Tablespoon Garlic Paste
1 Tablespoon Soy Sauce
1 Tablespoon Coriander leaves
3 Tablespoon Oil/Butter
Salt to taste

For Dough:

1 Cup Whole Wheat Flour
1 Cup All Purpose Flour/ Maida
1 Tablespoon Salt
Water


Method:


For stuffing/filling:

Add all the ingredients to the minced chicken and mix well.
Allow it to set for 15-20 minutes.

For Dough:

Add whole wheat flour, all - purpose flour and salt together.
With the help of water knead it  into a not too soft not hard dough.

For Momos:

Take small portions of the dough, roll it in dry flour and make it thin puri sized.
Place stuffing in the center and fold one end over other or simply make it "potli" shape and seal it together.
Heat water in a deep pan and place the steamer over it( you can also use idli cooker)
Place the stuffed momos on the top and cover it with a lid.
Since it is chicken momos so steam it for 20 minutes so that the chicken is cooked completely.
Serve the momos hot with spicy garlic tomato chutney.

Recipe: Beetroot Raita




Raitas and Papads complement your meal in a nice way. Raitas go very well with Biryanis and Pulav or even with the full Indian meal. Recently, I tried beetroot raita because I was totally in love with the colour of this raita by seeing the pictures of it. It is nutritious, tasty and simple to make. Try it yourself and you will too fall in love with it's colour and taste for sure.

Mint- yogurt Dip
Coconut Chuntey with Tomatoes 


Beetroot raita:


Total Time: 10 Minutes

Ingredients:


1 Beetroot (grated)
1 Cup Yogurt/Curd
1 Green Chilli
1/2 Tablespoon Cumin powder
Blacksalt to taste
Salt to taste

Method:


Grate the beetroot and keep it in a bowl
Whisk the curd nicely into it.
Add salt, cumin powder and green chilli and whisk everything nicely.
Serve with your meal

Recipe: Chinese-Style Vermicelli - A twist to regular Vermicelli Upma





Desi- Chinese the Indianized version of Chinese cuisines is popular throughout India. This great fusion is accepted and relished by everyone. I am also fond of Chinese cuisines and prepare them quite often in my kitchen. "Namkeen Sewaiyan" or "Vermicelli Upma or Pulav" is a popular evening snack or breakfast. I thought why  stick to only noodles so  I gave the vermicelli recipe a twist from the regular onion-tomato version and created the Chinese version of vermicelli. Check out the recipe:

Chinese-Style Vermicelli:


Preparation time: 10 minutes
Cooking Time: 10 Minutes
Serves : 2


Ingredients:


3 Cup Vermicelli (I used the Bambino brand)
1/2 cup finely chopped Cabbage
1/2 cup finely chopped Carrot
1/4 cup finely chopped Capsicum
1 Green chilli
1 small size Onion (optional)
2 Tablespoon Soy sauce
1 Tablespoon Vinegar
3 Tablespoon Ching's Noodles Masala
2 Tablespoon oil
Salt to taste


Method: 

Boil vermicelli, when cooked drain the excess water using a sieve and keep aside.
In a pan add oil, green chilli and all the vegetables. Saute it for 5 minutes.
Add the boiled vermicelli, ching's noodles masala, salt and all the sauces.
Mix everything well and cook it for 3-4 minutes on high flame (keep mixing)
Serve immediately
